- 1 (16 ounce) package potato gnocchi
- 1/2 cup heavy cream
- 1/4 cup prepared pesto
- 1/4 cup grated Parmesan cheese
- 2 tablespoons butter
- Salt and freshly ground black pepper to taste
- Optional: Cherry tomatoes, fresh basil for garnish
Instructions
- Cook gnocchi according to package directions. Drain, reserving about 1/2 cup of the pasta water.
- While the gnocchi is cooking, melt butter in a large skillet over medium heat.
- Add the heavy cream to the skillet and bring to a gentle simmer.
- Stir in the pesto and Parmesan cheese until well combined and the sauce is smooth.
- Add the drained gnocchi to the skillet with the sauce. Toss to coat evenly.
- If the sauce is too thick, add a little of the reserved pasta water, a tablespoon at a time, until it reaches your desired consistency.
- Season with salt and pepper to taste.
- Serve immediately, garnished with optional cherry tomatoes and fresh basil.
Notes
- For a richer flavor, you can use homemade pesto.
- If you don’t have heavy cream, half-and-half can be used, but the sauce may be thinner.
