Ingredients

  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, oil-packed and chopped
  • 1 teaspoon dried Italian seasoning
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 1/2 cups heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and freshly ground black pepper to taste
  • Fresh basil leaves, chopped, for garnish


Instructions

  1. Cook pasta according to package directions. Reserve about 1 cup of pasta water before draining.
  2. While pasta is cooking, heat olive oil in a large skillet over medium heat.
  3. Add minced garlic and cook until fragrant, about 1 minute. Be careful not to burn it.
  4. Stir in the chopped sun-dried tomatoes, Italian seasoning, and red pepper flakes (if using). Cook for another minute.
  5. Pour in the heavy cream and bring to a gentle simmer. Let it cook for 2-3 minutes until slightly thickened.
  6. Reduce heat to low and stir in the grated Parmesan cheese until melted and the sauce is smooth.
  7. Season the sauce with salt and pepper to your liking.
  8. Add the drained pasta to the skillet with the sauce. Toss to coat evenly. If the sauce is too thick, add a little reserved pasta water, a tablespoon at a time, until it reaches your desired consistency.
  9. Serve immediately, garnished with fresh chopped basil.
