- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 tbsp olive oil
- 1 small onion, chopped
- 3 cloves garlic, minced
- 1 tsp dried Italian seasoning
- 1/2 tsp red pepper flakes (optional)
- 1 cup chicken broth
- 1/2 cup heavy cream
- 1/4 cup sun-dried tomatoes, chopped
- 1/4 cup grated Parmesan cheese
- 2 cups fresh spinach
- Salt and freshly ground black pepper to taste
Instructions
- Season chicken pieces with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned on all sides, about 5-7 minutes. Remove chicken from skillet and set aside.
- Add chopped onion to the skillet and cook until softened, about 3-4 minutes.
- Stir in minced garlic, Italian seasoning, and red pepper flakes (if using). Cook for 1 minute until fragrant.
- Pour in chicken broth and scrape up any browned bits from the bottom of the skillet. Bring to a simmer.
- Stir in heavy cream, sun-dried tomatoes, and Parmesan cheese. Cook until the sauce thickens slightly, about 3-5 minutes.
- Return the chicken to the skillet. Add spinach and stir until wilted, about 1-2 minutes.
- Season with additional salt and pepper if needed. Serve immediately.

- For a lighter sauce, you can use half-and-half instead of heavy cream.
- Add cooked pasta or serve with crusty bread for a complete meal.
