Description

Make this easy, restaurant-style Creamy Tuscan Chicken with spinach and sun-dried tomatoes in one pan for a quick weeknight dinner.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 4 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, drained and chopped
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach


Instructions

  1. Season the chicken breasts on both sides with salt, pepper, and Italian seasoning.
  2. Heat the olive oil in a large skillet over medium-high heat. Sear the chicken for 5 to 7 minutes per side until golden brown and cooked through (internal temperature reaches 165°F). Remove the chicken from the skillet and set aside.
  3. Reduce the heat to medium. Add the minced garlic to the same skillet and cook for 30 seconds until fragrant.
  4. Add the chopped sun-dried tomatoes to the skillet and cook for 1 minute.
  5. Pour in the heavy cream and chicken broth. Bring the mixture to a simmer, scraping up any browned bits from the bottom of the pan.
  6. Stir in the Parmesan cheese until the sauce is smooth. Let the sauce simmer for 2 to 3 minutes until it thickens slightly.
  7. Add the fresh spinach to the sauce and stir until it wilts completely.
  8. Return the cooked chicken breasts to the skillet. Spoon the sauce over the chicken. Heat through for 1 minute before serving.

Notes

  • For a richer sauce, use half-and-half instead of heavy cream, but allow extra time for simmering to reach desired thickness.
  • If you want to serve this with pasta, reserve about 1/2 cup of the pasta cooking water to thin the sauce if needed.
  • You can substitute dried basil and oregano for Italian seasoning if you do not have a blend.
