- 1 1/2 cups shredded zucchini
- 1/2 teaspoon salt, plus more for seasoning
- 1/4 cup all-purpose flour
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 1 large egg
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a medium bowl, combine the shredded zucchini and 1/2 teaspoon salt. Let sit for 10 minutes to draw out excess moisture.
- Transfer the zucchini to a fine-mesh sieve or colander and press out as much liquid as possible. Alternatively, wrap the zucchini in a clean kitchen towel and squeeze out the liquid.
- In a clean bowl, combine the squeezed zucchini, flour, Parmesan cheese, parsley, egg, and pepper. Mix until well combined.
- Form the mixture into small patties, about 2 inches in diameter and 1/2 inch thick.
- Place the patties on the prepared baking sheet. Brush the tops of the fritters with olive oil.
- Bake for 20-25 minutes, flipping halfway through, until golden brown and crispy.
- Season with additional salt if desired before serving.
Notes
- Ensure you squeeze out as much liquid as possible from the zucchini for crispy fritters.
- You can substitute other herbs like dill or chives for parsley.
- Serve these fritters with a dollop of Greek yogurt or sour cream.
