Description

Make very crispy, savory potato chips at home using your oven. This recipe focuses on thin slicing and proper drying to achieve a crunch similar to fried chips, coated with Parmesan cheese.

  • 2 large Russet potatoes
  • 2 tablespoons olive oil
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder


Instructions

  1. Preheat your oven to 375°F (190°C). Line two large baking sheets with parchment paper.
  2. Wash and dry the potatoes thoroughly. Do not peel them.
  3. Slice the potatoes as thinly as possible, ideally using a mandoline slicer, aiming for 1/16 inch thickness.
  4. Place the potato slices in a large bowl and cover them completely with cold water. Let them soak for at least 30 minutes to remove excess starch.
  5. Drain the water and rinse the slices under cold running water until the water runs clear.
  6. Spread the potato slices in a single layer on clean kitchen towels or paper towels. Pat them completely dry. This step is crucial for crispiness.
  7. In a clean bowl, toss the dry potato slices with the olive oil until lightly coated.
  8. In a separate small bowl, mix the grated Parmesan cheese, salt, pepper, and garlic powder.
  9. Sprinkle the cheese mixture over the oiled potatoes and toss gently until the slices are evenly coated.
  10. Arrange the coated potato slices in a single layer on the prepared baking sheets. Do not let them overlap.
  11. Bake for 15 minutes. Carefully flip each chip.
  12. Return the chips to the oven and bake for another 5 to 10 minutes, watching closely, until they are golden brown and crisp. If some chips brown faster, remove them first.
  13. Remove from the oven and let the chips cool completely on the baking sheets; they will crisp up further as they cool.

Notes

  • Using a mandoline ensures uniform thickness, which helps all chips cook evenly.
  • If your Parmesan cheese starts to burn before the potatoes are done, reduce the oven temperature to 350°F (175°C) for the final baking period.
  • For extra crispness, you can bake the plain, oiled slices for 10 minutes before tossing them with the cheese mixture and returning them to the oven.
