- Place the potato slices in a large bowl and cover them completely with cold water. Let them soak for at least 30 minutes to remove excess starch.
- Drain the water and rinse the slices under cold running water until the water runs clear.
- Spread the potato slices in a single layer on clean kitchen towels or paper towels. Pat them completely dry. This step is crucial for crispiness.
- In a clean bowl, toss the dry potato slices with the olive oil until lightly coated.
- In a separate small bowl, mix the grated Parmesan cheese, salt, pepper, and garlic powder.
- Sprinkle the cheese mixture over the oiled potatoes and toss gently until the slices are evenly coated.
- Arrange the coated potato slices in a single layer on the prepared baking sheets. Do not let them overlap.
- Bake for 15 minutes. Carefully flip each chip.
- Return the chips to the oven and bake for another 5 to 10 minutes, watching closely, until they are golden brown and crisp. If some chips brown faster, remove them first.
- Remove from the oven and let the chips cool completely on the baking sheets; they will crisp up further as they cool.

- Using a mandoline ensures uniform thickness, which helps all chips cook evenly.
- If your Parmesan cheese starts to burn before the potatoes are done, reduce the oven temperature to 350°F (175°C) for the final baking period.
- For extra crispness, you can bake the plain, oiled slices for 10 minutes before tossing them with the cheese mixture and returning them to the oven.
