Description

Enjoy these Crispy Parmesan Zucchini Fries, a healthy snack idea perfect for busy days. They bring that satisfying crunch without the guilt. Clara Kohn from 911Recipes shares this simple, family-approved recipe.

Ingredients

Scale
  • 2 medium zucchini
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup Panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Cooking spray

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper and lightly coat with cooking spray.
  2. Wash and trim the ends of the zucchini. Cut each zucchini lengthwise into fry-sized sticks.
  3. Set up a breading station with three shallow dishes. Place flour in the first dish.
  4. Whisk the eggs in the second dish.
  5. Combine the Panko breadcrumbs, Parmesan cheese, garlic powder, salt, and pepper in the third dish.
  6. Working in batches, dredge each zucchini stick first in the flour, shaking off excess.
  7. Dip the floured stick into the beaten egg, letting excess drip off.
  8. Press the egg-coated stick firmly into the Parmesan-breadcrumb mixture until fully coated.
  9. Place the coated fries in a single layer on the prepared baking sheet. Do not overcrowd the pan.
  10. Lightly spray the tops of the fries with cooking spray for extra crispiness.
  11. Bake for 15 to 20 minutes, flipping halfway through, until golden brown and crispy.
  12. Serve immediately with your favorite dipping sauce.

Notes

  • For best results, pat the zucchini sticks dry with a paper towel before starting the breading process.
  • You can use whole wheat flour if you prefer a slightly healthier coating option.
  • These fries are best eaten right after baking for maximum crispness.
