- 2 tablespoons avocado oil or other high-heat oil

Instructions
- Preheat your oven to 425 degrees Fahrenheit. Line a large baking sheet with parchment paper for easier cleanup.
- Peel the sweet potatoes, if desired, and cut them into uniform 1-inch cubes. Uniform size helps them cook evenly.
- Place the sweet potato cubes in a large bowl. Drizzle with the avocado oil.
- Add the salt, pepper, and garlic powder to the bowl. Toss everything together until the potatoes are evenly coated with oil and seasoning.
- Spread the seasoned sweet potatoes onto the prepared baking sheet in a single layer. Do not overcrowd the pan; use two sheets if necessary. Overcrowding causes steaming, which prevents crispiness.
- Roast for 20 minutes.
- Remove the pan from the oven and carefully flip the sweet potatoes using a spatula.
- Return the pan to the oven and roast for another 10 to 15 minutes, or until the edges are deeply browned and crisp.
- Remove from the oven and serve immediately for the best texture.
Notes
- For extra crispiness, you can soak the cut potatoes in cold water for 30 minutes before drying them thoroughly. Pat them completely dry with paper towels before oiling.
- If you prefer a sweeter flavor, substitute 1 teaspoon of brown sugar for the garlic powder.
- Use a high smoke point oil like avocado oil for the best roasting results at high heat.
