Description

Follow these steps to roast sweet potatoes that develop a very crispy exterior and a soft inside.

Ingredients

Scale
  • 2 large sweet potatoes (about 1.5 lbs)
  • 2 tablespoons avocado oil or other high-heat oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder

Instructions

  1. Preheat your oven to 425 degrees Fahrenheit. Line a large baking sheet with parchment paper for easier cleanup.
  2. Peel the sweet potatoes, if desired, and cut them into uniform 1-inch cubes. Uniform size helps them cook evenly.
  3. Place the sweet potato cubes in a large bowl. Drizzle with the avocado oil.
  4. Add the salt, pepper, and garlic powder to the bowl. Toss everything together until the potatoes are evenly coated with oil and seasoning.
  5. Spread the seasoned sweet potatoes onto the prepared baking sheet in a single layer. Do not overcrowd the pan; use two sheets if necessary. Overcrowding causes steaming, which prevents crispiness.
  6. Roast for 20 minutes.
  7. Remove the pan from the oven and carefully flip the sweet potatoes using a spatula.
  8. Return the pan to the oven and roast for another 10 to 15 minutes, or until the edges are deeply browned and crisp.
  9. Remove from the oven and serve immediately for the best texture.

Notes

  • For extra crispiness, you can soak the cut potatoes in cold water for 30 minutes before drying them thoroughly. Pat them completely dry with paper towels before oiling.
  • If you prefer a sweeter flavor, substitute 1 teaspoon of brown sugar for the garlic powder.
  • Use a high smoke point oil like avocado oil for the best roasting results at high heat.
