Description

Make crispy, oven-roasted smashed carrot bites seasoned with a maple and thyme glaze. This recipe yields a crunchy texture perfect for a snack or a side dish.

Ingredients

Scale
  • 1.5 lbs baby carrots or small whole carrots
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon maple syrup
  • 1 teaspoon fresh thyme leaves
  • 1/2 teaspoon garlic powder

Instructions

  1. Preheat your oven to 425 degrees Fahrenheit. Line a large baking sheet with parchment paper.
  2. Place the carrots in a large pot and cover them with water. Add 1/2 teaspoon of salt. Bring the water to a boil and cook the carrots until they are tender when pierced with a fork, about 10 to 15 minutes. Drain the carrots completely and let them cool slightly.
  3. Place the cooked carrots on the prepared baking sheet. Using the bottom of a sturdy glass or a potato masher, gently press down on each carrot until it is flattened to about 1/4 inch thickness. Do not smash them completely flat.
  4. Drizzle the carrots with olive oil. Sprinkle evenly with the remaining salt, pepper, and garlic powder.
  5. Roast for 15 minutes.
  6. While the carrots roast, whisk together the maple syrup and fresh thyme leaves in a small bowl.
  7. Remove the baking sheet from the oven. Brush the maple-thyme glaze evenly over the smashed carrots.
  8. Return the carrots to the oven and roast for another 10 to 15 minutes, or until the edges are deeply browned and crispy.
  9. Serve immediately for the best crispiness.

Notes

  • Use smaller carrots for easier smashing and more surface area for crisping.
  • Drying the carrots thoroughly after boiling is key to achieving crispiness in the oven.
  • For extra flavor, substitute half the olive oil with melted butter before the first roast.
