- 1 large egg, beaten
- 2 green onions, thinly sliced

- Vegetable oil, for frying
Instructions
- In a medium bowl, combine the grated zucchini, flour, Parmesan cheese, beaten egg, green onions, salt, and pepper. Mix well until all ingredients are evenly distributed.
- Heat about 1/4 inch of vegetable oil in a large skillet over medium-high heat until shimmering.
- Carefully drop spoonfuls of the zucchini mixture into the hot oil. Do not overcrowd the skillet.
- Fry for 2-3 minutes per side, until golden brown and crispy.
- Remove the fritters from the skillet with a slotted spoon and place them on a paper towel-lined plate to drain excess oil.
- Serve immediately.
