Ingredients
Scale
- 2 lbs boneless, skinless chicken thighs or breasts, cut into 1-inch pieces
- 1 cup low-sodium soy sauce
- 1/2 cup bourbon
- 1/2 cup packed brown sugar
- 1/4 cup apple cider vinegar
- 2 tablespoons minced fresh ginger
- 4 cloves garlic, minced
- 1 teaspoon ground black pepper
- 1/4 cup cold water
- 2 tablespoons cornstarch
- For serving: Cooked rice, green onions for garnish
Instructions
- Place the cut chicken pieces into the bottom of your slow cooker.
- In a separate bowl, whisk together the soy sauce, bourbon, brown sugar, apple cider vinegar, ginger, garlic, and black pepper.
- Pour the sauce mixture over the chicken in the slow cooker.
- Cover and cook on low for 4 to 6 hours, or on high for 2 to 3 hours, until the chicken is tender.
- About 30 minutes before serving, mix the cold water and cornstarch in a small bowl to create a slurry.
- Stir the cornstarch slurry into the sauce in the slow cooker.
- Cover and cook on high for the remaining 30 minutes, stirring occasionally, until the sauce thickens to your desired consistency.
- Serve the bourbon chicken over cooked rice and garnish with sliced green onions.
Notes
- If you prefer not to use bourbon, substitute it with an equal amount of chicken broth mixed with 1 teaspoon of Worcestershire sauce for depth of flavor.
- To make the sauce extra sticky, allow it to simmer uncovered for the last 15 minutes after adding the slurry.
- This chicken reheats well and is great for meal prepping.
