Make this easy, hearty lasagna soup in your slow cooker for a simple weeknight dinner that tastes like classic lasagna.


Ingredients

  • 1 pound Italian sausage, casings removed
  • 1 pound lean ground beef
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 2 (28 ounce) cans crushed tomatoes
  • 1 (15 ounce) can tomato sauce
  • 4 cups beef broth
  • 1 tablespoon dried Italian seasoning
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 12 ounces lasagna noodles, broken into bite-sized pieces
  • 1 cup water
  • 8 ounces cream cheese, cut into cubes
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese, plus more for topping
  • 1 cup shredded mozzarella cheese, plus more for topping


Instructions

  1. Place the Italian sausage and ground beef in a large skillet over medium heat. Cook until browned, breaking the meat into small pieces. Drain off any excess grease.
  2. Transfer the cooked meat to the basin of your slow cooker.
  3. Add the chopped onion, minced garlic, crushed tomatoes, tomato sauce, beef broth, Italian seasoning, basil, salt, and pepper to the slow cooker. Stir everything together well.
  4. Cover and cook on low for 6 hours or on high for 3 hours.
  5. About 30 minutes before serving, stir in the broken lasagna noodles and water. Continue cooking until the noodles are tender, about 20 to 30 minutes, stirring occasionally to prevent sticking.
  6. Reduce the heat to the lowest setting or turn the slow cooker off. Stir in the cream cheese cubes until they melt and the soup is creamy.
  7. Stir in the heavy cream and the 1 cup of Parmesan cheese and 1 cup of mozzarella cheese until fully combined and melted.
  8. Ladle the soup into bowls. Top each serving with extra Parmesan and mozzarella cheese before serving.

Notes

  • You can substitute ground turkey for the beef or sausage if you prefer a lighter flavor.
  • If the soup seems too thick after adding the noodles, add a splash more beef broth or water until you reach your desired consistency.
