Description

Make this incredibly flavorful, creamy Marry Me Chicken in your slow cooker. This dump-and-go recipe uses sun-dried tomatoes and Parmesan cheese for a rich sauce perfect for any weeknight or date night.

Ingredients

Scale
  • 2 lbs boneless, skinless chicken breasts
  • 1 cup chicken broth
  • 1/2 cup sun-dried tomatoes, drained and chopped
  • 1 small yellow onion, thinly sliced
  • 4 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup cream cheese, cubed
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Place the chicken breasts in the bottom of your slow cooker.
  2. In a separate bowl, mix the chicken broth, chopped sun-dried tomatoes, sliced onion, minced garlic, Italian seasoning, salt, and pepper. Pour this mixture over the chicken.
  3. Cover and cook on LOW for 6 to 7 hours or on HIGH for 3 to 4 hours, until the chicken is cooked through and easily shredded.
  4. Remove the chicken from the slow cooker and shred it using two forks. Return the shredded chicken to the slow cooker.
  5. Add the cubed cream cheese and heavy cream to the slow cooker. Stir gently until the cream cheese melts and the sauce is smooth.
  6. Stir in the grated Parmesan cheese until fully incorporated and the sauce thickens slightly.
  7. Cook on LOW for another 15 minutes, uncovered, to allow the sauce to set.
  8. Garnish with fresh parsley before serving.

Notes

  • For a richer flavor, substitute chicken thighs for chicken breasts. Adjust cooking time if necessary.
  • Serve this creamy chicken over cooked pasta, white rice, or mashed potatoes to soak up the sauce.
  • If you prefer a thicker sauce, mix 1 tablespoon of cornstarch with 2 tablespoons of cold water and stir it into the sauce during the last 15 minutes of cooking.
