Description

Ingredients

  • 1.5 lbs butternut squash, peeled, seeded, and cubed
  • 1 tablespoon olive oil
  • 1/2 cup chopped onion
  • 1/4 cup chopped celery
  • 1 clove garlic, minced
  • 1/2 cup milk
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • For the crunchy topping:
  • 1/2 cup breadcrumbs
  • 2 tablespoons melted butter
  • 1/4 cup chopped pecans or walnuts (optional)


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Steam or boil the cubed butternut squash until tender, about 15-20 minutes. Drain well.
  3. While the squash is cooking, heat the olive oil in a skillet over medium heat. Add the chopped onion and celery and cook until softened, about 5 minutes. Add the minced garlic and cook for 1 minute more.
  4. In a large bowl, mash the cooked squash. Stir in the sautéed onion mixture, milk, Parmesan cheese, salt, and pepper until well combined.
  5. Pour the squash mixture into a greased 8×8 inch baking dish.
  6. In a small bowl, combine the breadcrumbs, melted butter, and nuts (if using). Mix until the breadcrumbs are evenly coated.
  7. Sprinkle the breadcrumb mixture evenly over the squash mixture in the baking dish.
  8. Bake for 25-30 minutes, or until the topping is golden brown and the casserole is heated through.
  9. Let it cool slightly before serving.

Notes

  • You can use other types of squash like acorn or delicata if preferred.
  • For a spicier kick, add a pinch of cayenne pepper to the squash mixture.
  • If you don’t have nuts, simply use breadcrumbs and butter for the topping.
