Description
Make simple, portion-controlled frozen yogurt bites featuring strawberries coated in dark chocolate. This recipe is easy to prepare and makes a refreshing snack.
Ingredients
Scale
- 1 cup plain Greek yogurt, full fat or 2%
- 2 tablespoons maple syrup or honey
- 1 teaspoon vanilla extract
- 1 cup fresh strawberries, hulled and sliced
- 4 ounces dark chocolate (70% cacao or higher), chopped
- 1 teaspoon coconut oil
Instructions
- Line a small baking sheet with parchment paper.
- In a small bowl, mix the Greek yogurt, maple syrup, and vanilla extract until smooth.
- Spoon small dollops (about 1 teaspoon each) of the yogurt mixture onto the prepared baking sheet.
- Gently press one or two small strawberry slices onto the top of each yogurt dollop.
- Place the baking sheet in the freezer for at least 2 hours, or until the yogurt bites are completely firm.
- Melt the chopped dark chocolate and coconut oil together in a microwave-safe bowl in 30-second intervals, stirring well after each interval, until smooth. This is your quick chocolate coating method.
- Remove the frozen yogurt bites from the freezer.
- Dip the bottom or top of each frozen bite into the melted dark chocolate mixture. You can also drizzle the chocolate over them.
- Return the dipped bites to the parchment-lined sheet.
- Freeze for an additional 15 minutes, or until the chocolate coating is set.
- Store the finished bites in an airtight container in the freezer.
Notes
- For a firmer coating, you can temper the chocolate, but the coconut oil method sets quickly when coating frozen items.
- Use full-fat yogurt for the best texture when frozen.
- You can substitute strawberries with raspberries or blueberries.
