Description

Make simple, portion-controlled frozen yogurt bites featuring strawberries coated in dark chocolate. This recipe is easy to prepare and makes a refreshing snack.

Ingredients

Scale
  • 1 cup plain Greek yogurt, full fat or 2%
  • 2 tablespoons maple syrup or honey
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, hulled and sliced
  • 4 ounces dark chocolate (70% cacao or higher), chopped
  • 1 teaspoon coconut oil

Instructions

  1. Line a small baking sheet with parchment paper.
  2. In a small bowl, mix the Greek yogurt, maple syrup, and vanilla extract until smooth.
  3. Spoon small dollops (about 1 teaspoon each) of the yogurt mixture onto the prepared baking sheet.
  4. Gently press one or two small strawberry slices onto the top of each yogurt dollop.
  5. Place the baking sheet in the freezer for at least 2 hours, or until the yogurt bites are completely firm.
  6. Melt the chopped dark chocolate and coconut oil together in a microwave-safe bowl in 30-second intervals, stirring well after each interval, until smooth. This is your quick chocolate coating method.
  7. Remove the frozen yogurt bites from the freezer.
  8. Dip the bottom or top of each frozen bite into the melted dark chocolate mixture. You can also drizzle the chocolate over them.
  9. Return the dipped bites to the parchment-lined sheet.
  10. Freeze for an additional 15 minutes, or until the chocolate coating is set.
  11. Store the finished bites in an airtight container in the freezer.

Notes

  • For a firmer coating, you can temper the chocolate, but the coconut oil method sets quickly when coating frozen items.
  • Use full-fat yogurt for the best texture when frozen.
  • You can substitute strawberries with raspberries or blueberries.
