Ingredients

  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup all-purpose flour

  • 1/4 teaspoon salt
  • 1 cup grated zucchini, squeezed dry
  • 1/2 cup chocolate chips (optional)

For the Frosting:

  • 1/4 cup (1/2 stick) unsalted butter, softened
  • 2 cups powdered sugar
  • 2-3 tablespoons milk
  • 1/2 teaspoon vanilla extract


Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour an 8×8 inch baking pan.
  2. In a large bowl, whisk together the melted butter and sugar until combined.
  3. Whisk in the cocoa powder and vanilla extract.
  4. Add the eggs one at a time, whisking well after each addition.
  5. In a separate bowl, whisk together the flour, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  7. Gently fold in the grated zucchini and chocolate chips (if using).
  8. Pour the batter into the prepared pan and spread evenly.
  9. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with moist crumbs (not wet batter).
  10. Let the brownies cool completely in the pan on a wire rack.
  11. While the brownies are cooling, prepare the frosting. In a medium bowl, beat the softened butter until creamy.
  12. Gradually add the powdered sugar, alternating with the milk, beating until smooth and spreadable. Add more milk if needed for desired consistency.
  13. Stir in the vanilla extract.
  14. Once the brownies are completely cool, spread the frosting evenly over the top.
  15. Cut into squares and serve.

Notes

  • Make sure to squeeze as much moisture as possible out of the grated zucchini. This prevents the brownies from being too wet.
