Description

This deconstructed sushi bowl delivers all the delicious flavors of your favorite sushi roll in an easy-to-make, convenient bowl. Perfect for a quick weeknight meal.


Ingredients

  • 1 1/2 cups sushi rice
  • 2 cups water
  • 1/4 cup rice vinegar
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 1 pound cooked shrimp, imitation crab, or sashimi-grade salmon, diced
  • 1 cucumber, thinly sliced or julienned
  • 2 carrots, julienned
  • 1 avocado, diced
  • 4 sheets nori, cut into strips
  • 1/4 cup mayonnaise
  • 2 tablespoons sriracha (adjust to taste)
  • 1 tablespoon soy sauce
  • Sesame seeds for garnish
  • Green onions, chopped, for garnish


Instructions

  1. Rinse the sushi rice under cold water until the water runs clear.
  2. Combine the rinsed rice and water in a medium saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until all water is absorbed. Remove from heat and let stand, covered, for 10 minutes.
  3. In a small bowl, whisk together the rice vinegar, sugar, and salt until the sugar and salt dissolve.
  4. Transfer the cooked rice to a large bowl. Pour the vinegar mixture over the rice and gently fold it in with a rice paddle or spoon until well combined and glossy.
  5. In another small bowl, mix the mayonnaise, sriracha, and soy sauce to make the spicy mayo.
  6. To assemble the bowls, divide the seasoned sushi rice among four bowls.
  7. Arrange your chosen protein (shrimp, crab, or salmon), cucumber, carrots, avocado, and nori strips over the rice.
  8. Drizzle generously with spicy mayo.
  9. Garnish with sesame seeds and chopped green onions. Serve immediately.

Notes

  • For extra flavor, you can marinate your protein in a little soy sauce and sesame oil before adding it to the bowl.
  • Feel free to customize with your favorite sushi toppings like edamame, pickled ginger, or masago.
