Scale
  • 2 pounds small red potatoes
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 2 tablespoons fresh dill, chopped
  • 1 tablespoon Dijon mustard
  • 1 tablespoon white wine vinegar
  • 1/4 cup finely chopped red onion

  3. Place potatoes in a large pot and cover with cold water.
  4. Add a generous pinch of salt to the water.
  5. Bring water to a boil, then reduce heat and simmer until potatoes are tender, about 10-15 minutes.
  6. Drain potatoes and let them cool completely.
  7. In a large bowl, whisk together mayonnaise, sour cream, fresh dill, Dijon mustard, and white wine vinegar.
  8. Add the cooled potatoes and red onion to the dressing.
  9. Gently toss to combine, making sure all potatoes are coated.
  10. Season with salt and black pepper to taste.
  11. Refrigerate for at least 30 minutes before serving to allow flavors to meld.

Notes

  • For extra flavor, consider adding a tablespoon of chopped dill pickles or a teaspoon of pickle juice to the dressing.
  • You can boil the potatoes with their skins on for added nutrients and texture, then peel if desired after cooling.
  • This salad can be made a day ahead for best flavor.
