Description

Make this simple, cheesy Dorito Casserole for a quick weeknight dinner that everyone, especially kids, will love. It is a comforting, layered bake using ground beef and nacho cheese flavor.


Ingredients

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1 packet (1 ounce) taco seasoning mix
  • 1 can (15 ounces) refried beans
  • 1 cup water
  • 1 can (10 ounces) Ro-Tel diced tomatoes and green chilies, undrained
  • 1 can (10.5 ounces) condensed nacho cheese soup
  • 1 cup sour cream
  • 1 bag (9.25 ounces) Nacho Cheese Flavored Doritos, slightly crushed
  • 2 cups shredded cheddar cheese


Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. Brown the ground beef and onion in a large skillet over medium heat. Drain off any excess grease.
  3. Stir the taco seasoning mix, refried beans, water, and Ro-Tel into the skillet with the meat mixture. Cook until heated through, about 5 minutes.
  4. In a separate bowl, mix the condensed nacho cheese soup and sour cream until smooth.
  5. Spread half of the meat mixture evenly in the bottom of the prepared baking dish.
  6. Layer half of the crushed Doritos over the meat layer.
  7. Spread half of the cheese and sour cream mixture over the Doritos.
  8. Repeat the layers: remaining meat mixture, remaining Doritos, and the remaining cheese and sour cream mixture.
  9. Sprinkle the shredded cheddar cheese over the top layer.
  10. Bake for 20 to 25 minutes, or until the casserole is bubbly and the cheese is melted and lightly golden.
  11. Let the casserole rest for 5 minutes before cutting and serving.

Notes

  • For extra crunch, save a small handful of Doritos to sprinkle on top right before serving.
  • You can substitute ground turkey or cooked shredded chicken for the ground beef if you prefer.
  • If you do not have nacho cheese soup, you can substitute 10 ounces of your favorite creamy cheese sauce.
