Enjoy a comforting and delicious side dish that’s a lighter alternative to mashed potatoes. This easy recipe for mashed cauliflower is perfect for weeknights and fits into a low-carb lifestyle.

Ingredients

Scale
  • 1 large head cauliflower, cut into florets
  • 2 tablespoons butter
  • 1/4 cup heavy cream (or unsweetened almond milk for dairy-free)
  • Salt, to taste
  • Black pepper, to taste
  • Optional: 1 clove garlic, minced

Instructions

  1. Wash and cut the cauliflower into florets.
  2. Steam or boil the cauliflower until very tender, about 10-15 minutes.
  3. Drain the cauliflower thoroughly.
  4. Transfer the cooked cauliflower to a food processor or a large bowl.
  5. Add butter, heavy cream (or almond milk), salt, and pepper. If using, add minced garlic.
  6. Process or mash until smooth and creamy. Add more cream if needed to reach desired consistency.
  7. Taste and adjust seasoning.
  8. Serve warm.

Notes

  • For a roasted garlic flavor, roast a whole head of garlic until soft, then squeeze the cloves into the mashed cauliflower.
