Description

This easy cowboy pasta salad is packed with flavor and perfect for potlucks or a simple weeknight meal.


Ingredients

  • 1 pound pasta (such as rotini or cavatappi)
  • 1 cup cooked corn (fresh, frozen, or canned)
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1/2 cup chopped red onion
  • 1/2 cup chopped bell pepper (any color)
  • 1/4 cup chopped fresh cilantro or parsley
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream or Greek yogurt
  • 2 tablespoons lime juice
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste


Instructions

  1. Cook pasta according to package directions. Drain and rinse with cold water.
  2. In a large bowl, combine the cooked pasta, corn, black beans, red onion, bell pepper, and cilantro.
  3. In a separate small bowl, whisk together the mayonnaise, sour cream, lime juice, chili powder, and cumin. Season with salt and pepper.
  4. Pour the dressing over the pasta mixture and stir to coat everything evenly.
  5. Cover and refrigerate for at least 30 minutes before serving to allow the flavors to meld.
