Description

A quick and fresh pasta salad featuring tomatoes, mozzarella, and basil.


Ingredients

  • 1 pound pasta (rotini or penne)
  • 1 pint cherry or grape tomatoes, halved
  • 8 ounces small fresh mozzarella balls (bocconcini), drained and halved
  • 1/2 cup fresh basil leaves, chopped
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1 clove garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper


Instructions

  1. Cook pasta according to package directions. Drain and rinse with cold water to cool.
  2. In a small bowl, whisk together olive oil, balsamic vinegar, minced garlic, salt, and pepper to make the dressing.
  3. In a large bowl, combine the cooled pasta, halved tomatoes, and mozzarella balls.
  4. Pour the dressing over the pasta mixture. Toss gently to coat all ingredients.
  5. Stir in the chopped fresh basil.
  6. Chill for at least 30 minutes before serving.

Notes

  • Use high-quality olive oil for better flavor.
  • If you cannot find small mozzarella balls, cube a larger ball of fresh mozzarella.
