Description
A quick and fresh pasta salad featuring tomatoes, mozzarella, and basil.
Ingredients

- 1 pound pasta (rotini or penne)
- 1 pint cherry or grape tomatoes, halved
- 8 ounces small fresh mozzarella balls (bocconcini), drained and halved
- 1/2 cup fresh basil leaves, chopped
- 1/4 cup olive oil
- 2 tablespoons balsamic vinegar
- 1 clove garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Cook pasta according to package directions. Drain and rinse with cold water to cool.
- In a small bowl, whisk together olive oil, balsamic vinegar, minced garlic, salt, and pepper to make the dressing.
- In a large bowl, combine the cooled pasta, halved tomatoes, and mozzarella balls.
- Pour the dressing over the pasta mixture. Toss gently to coat all ingredients.
- Stir in the chopped fresh basil.
- Chill for at least 30 minutes before serving.
Notes
- Use high-quality olive oil for better flavor.
- If you cannot find small mozzarella balls, cube a larger ball of fresh mozzarella.
