Make this simple, creamy cheesy potato casserole. It is a comforting side dish perfect for family dinners or potlucks.

- 2 lbs frozen shredded hash browns, thawed
- 1 can (10.5 oz) condensed cream of chicken soup
- 1 cup sour cream
- 1/2 cup milk
- 1/2 cup butter, melted
- 1 cup shredded sharp cheddar cheese, divided
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup crushed corn flakes (optional topping)
Instructions
- Preheat your oven to 350 degrees Fahrenheit. Grease a 9×13 inch baking dish.
- In a large bowl, combine the thawed hash browns, cream of chicken soup, sour cream, milk, and melted butter. Mix until just combined.
- Stir in salt, pepper, and 3/4 cup of the cheddar cheese.
- Spread the potato mixture evenly into the prepared baking dish.
- Bake for 45 minutes.
- Remove the dish from the oven. Sprinkle the remaining 1/4 cup of cheese and the crushed corn flakes (if using) over the top.
- Return to the oven and bake for another 10 to 15 minutes, or until the topping is golden brown and the casserole is bubbly.
- Let stand for 5 minutes before serving.
Notes
- You can prepare this casserole the night before and keep it covered in the refrigerator. Add about 10 minutes to the initial baking time if baking directly from the fridge.
- For extra flavor, add 1/2 cup of diced onion to the mixture before baking.
