Description
Make these fluffy, high-protein egg bites at home! This easy recipe uses cottage cheese for a creamy texture, perfect for quick breakfasts or meal prepping. Bake them in the oven or use an Instant Pot.
Ingredients
Scale
- 1 cup cottage cheese (full fat or low fat)
- 6 large eggs
- 1/4 cup shredded cheese (cheddar or Monterey Jack)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Optional Add-in: 1/2 cup cooked, crumbled bacon or chopped spinach
Instructions
- Preheat your oven to 300°F (150°C). Lightly grease a 12-cup muffin tin or silicone mold.
- In a blender, combine the cottage cheese, eggs, salt, and pepper. Blend until the mixture is completely smooth and creamy. This step is key for fluffy egg bites.
- If using add-ins like bacon or spinach, stir them into the blended egg mixture now.
- Pour the egg mixture evenly into the prepared muffin cups, filling each about three-quarters full. Sprinkle the shredded cheese over the top of each cup.
- Bake for 20 to 25 minutes, or until the egg bites are set and a toothpick inserted in the center comes out clean. If using a silicone mold, baking time might be slightly longer.
- Let the egg bites cool in the muffin tin for 5 minutes before carefully removing them.
- For meal prep, store cooled egg bites in an airtight container in the refrigerator for up to 4 days or freeze them for longer storage. Reheat in the microwave for 30-60 seconds.
Notes
- For a Starbucks sous vide copycat texture, you can use an Instant Pot with a trivet and silicone egg bite molds. Cook on High Pressure for 7 minutes, followed by a 5-minute natural pressure release, then quick release.
- You can substitute Greek yogurt for cottage cheese for a slightly tangier flavor, but the texture will be less dense.
- These are a great low carb breakfast option.
- For a keto egg bites version, skip any starchy vegetables and stick to cheese, bacon, or low-carb veggies like broccoli.
