  • 1 pre-made 9-inch pie crust (or homemade)
  • 1 cup (2 sticks) unsalted butter
  • 4 ounces unsweetened chocolate, chopped
  • 1 1/2 cups granulated sugar
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 3 large eggs, lightly beaten
  • 1 teaspoon vanilla extract
  • 1/2 cup semi-sweet chocolate chips (optional, for extra richness)


Instructions

  1. Preheat your oven to 350 degrees Fahrenheit. Place the pie crust on a baking sheet.
  2. In a medium saucepan over low heat, melt the butter and chopped unsweetened chocolate together, stirring until smooth. Remove from heat.
  3. Whisk the granulated sugar, flour, and salt into the chocolate mixture until combined.
  4. In a separate bowl, lightly beat the eggs. Slowly whisk the beaten eggs and vanilla extract into the chocolate mixture until the batter is uniform.
  5. Stir in the chocolate chips, if using.
  6. Pour the batter carefully into the unbaked pie crust.
  7. Bake for 35 to 40 minutes. The edges should look set, but the center will still look slightly soft and gooey. Do not overbake; this is what keeps it fudgy.
  8. Let the pie cool on a wire rack for at least 30 minutes before slicing and serving warm.

Notes

  • For the best gooey texture, serve the pie warm, about 30 minutes after it comes out of the oven.
