Easy Guinness Beef Stew with Carrots and Potatoes

Description

Make a rich, simple Guinness Beef Stew using a slow cooker. This recipe features tender beef, carrots, and potatoes in a savory stout broth.


Ingredients

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 (14.9 oz) can Guinness stout beer
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 3 medium carrots, peeled and cut into 1-inch pieces
  • 3 medium potatoes, peeled and cut into 1-inch pieces


Instructions

  1. Season the beef cubes with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Brown the beef in batches; remove and set aside.
  3. Add the chopped onion to the skillet and cook until soft, about 5 minutes. Add garlic and cook for 1 minute more.
  4. Sprinkle the flour over the onions and stir for 1 minute.
  5. Pour in the Guinness, scraping up any browned bits from the bottom of the pan. Stir until the mixture thickens slightly.
  6. Transfer the beef, onion mixture, beef broth, Worcestershire sauce, and thyme to a slow cooker.
  7. Stir well. Cover and cook on low for 6 hours or on high for 3 hours.
  8. Add the carrots and potatoes to the slow cooker. Stir gently.
  9. Continue cooking on low for another 1 to 1.5 hours, or until the vegetables are tender and the beef shreds easily.
  10. Taste and adjust seasoning before serving.

Notes

  • For a thicker stew, mix 1 tablespoon of cornstarch with 2 tablespoons of cold water and stir into the slow cooker during the last 30 minutes of cooking.
  • You can sear the beef in the slow cooker insert on the stove top if your model allows, reducing the number of pots used.
