Easy no-bake cheesecake bars with a graham cracker crust and fresh berry topping. Perfect for a quick dessert.

- 1 ½ cups graham cracker crumbs
- ½ cup melted unsalted butter
- 8 ounces cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- ½ cup heavy cream, whipped
- 2 cups mixed fresh berries
- 2 tablespoons granulated sugar (optional, for berries)
Instructions
- Combine graham cracker crumbs and melted butter. Press mixture into the bottom of an 8×8 inch pan.
- Refrigerate crust for 30 minutes.
- Beat softened cream cheese until smooth.
- Add powdered sugar and vanilla extract; beat until combined.
- Fold in whipped heavy cream.
- Spread cream cheese mixture over chilled crust.
- Refrigerate for at least 2 hours.
- Toss berries with granulated sugar if desired.
- Top cheesecake bars with berries before serving.
- Cut into squares and serve.
Notes
- For a firmer crust, bake at 350°F for 8-10 minutes before chilling.
- Any type of berry or fruit can be used for the topping.
- Bars can be made a day ahead.
