Description

- 1 large yellow onion, chopped
- 1 pound ground turkey
- 2 cloves garlic, minced
- 1 (15 ounce) can pumpkin puree (not pie filling)
- 1 (15 ounce) can black beans, rinsed and drained
- 1 (15 ounce) can kidney beans, rinsed and drained
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 (10 ounce) can Rotel (diced tomatoes and green chilies), undrained
- 1 cup chicken broth
- 2 tablespoons chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper (optional)
- Salt and black pepper to taste
Instructions
- Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
- Add the ground turkey to the pot. Break it up with a spoon and cook until browned completely. Drain any excess grease.
- Stir in the minced garlic, chili powder, cumin, and smoked paprika. Cook for 1 minute until fragrant.
- Add the pumpkin puree, black beans, kidney beans, diced tomatoes (with liquid), Rotel (with liquid), and chicken broth to the pot. Stir well to combine all ingredients.
- Bring the mixture to a simmer. Reduce the heat to low, cover the pot partially, and let the chili cook for at least 30 minutes, stirring occasionally. This allows the flavors to blend.
- Taste the chili and add salt, pepper, and cayenne pepper if you want more heat.
- Serve hot with your favorite toppings.
Notes
- For a slow cooker version, combine all ingredients in the slow cooker and cook on low for 6-8 hours or high for 3-4 hours.
- If you prefer a vegetarian option, substitute the ground turkey with 1 pound of crumbled plant-based ground or add an extra can of beans and corn.
- This chili freezes well for future meals. Cool completely before storing in airtight containers.
