Description

Make this hearty, flavorful turkey pumpkin chili in one pot on the stovetop. It is simple to prepare and great for meal prepping during the fall season.


Ingredients

  • 1 tablespoon olive oil
  • 1 large yellow onion, chopped
  • 1 pound ground turkey
  • 2 cloves garlic, minced
  • 1 (15 ounce) can pumpkin puree (not pie filling)
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can kidney beans, rinsed and drained
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 (10 ounce) can Rotel (diced tomatoes and green chilies), undrained
  • 1 cup chicken broth
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and black pepper to taste


Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
  2. Add the ground turkey to the pot. Break it up with a spoon and cook until browned completely. Drain any excess grease.
  3. Stir in the minced garlic, chili powder, cumin, and smoked paprika. Cook for 1 minute until fragrant.
  4. Add the pumpkin puree, black beans, kidney beans, diced tomatoes (with liquid), Rotel (with liquid), and chicken broth to the pot. Stir well to combine all ingredients.
  5. Bring the mixture to a simmer. Reduce the heat to low, cover the pot partially, and let the chili cook for at least 30 minutes, stirring occasionally. This allows the flavors to blend.
  6. Taste the chili and add salt, pepper, and cayenne pepper if you want more heat.
  7. Serve hot with your favorite toppings.

Notes

  • For a slow cooker version, combine all ingredients in the slow cooker and cook on low for 6-8 hours or high for 3-4 hours.
  • If you prefer a vegetarian option, substitute the ground turkey with 1 pound of crumbled plant-based ground or add an extra can of beans and corn.
  • This chili freezes well for future meals. Cool completely before storing in airtight containers.
