- 1 (10 ounce) can Rotel Diced Tomatoes and Green Chilies, undrained
- 1 (16 ounce) package Velveeta cheese, cut into cubes
- 1 (8 ounce) package cream cheese, cubed
Instructions
- Combine the Rotel, Velveeta cubes, and cream cheese cubes in a medium saucepan or a small slow cooker.
- If using a saucepan, heat over medium-low heat, stirring constantly until the cheeses are completely melted and the mixture is smooth. Do not boil.
- If using a slow cooker, cook on low for 1 to 2 hours, stirring every 30 minutes until smooth.
- Once smooth, transfer the dip to a serving bowl. Serve warm with tortilla chips or crackers.
Notes
- For a meat version, brown 1 pound of ground beef or sausage and drain the fat before adding it to the cheese mixture.
- You can substitute Velveeta with a similar processed cheese product if needed.
- If the dip thickens while serving, add a splash of milk to restore the creamy texture.
