Description

A quick and easy sweet potato salad perfect for a busy weeknight.


Ingredients

  • 2 medium sweet potatoes
  • 1/4 cup olive oil
  • Salt and pepper to taste
  • 1/4 cup chopped pecans
  • 1/4 cup dried cranberries
  • 2 tablespoons maple syrup


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Peel and dice sweet potatoes into 1-inch cubes.
  3. Toss sweet potato cubes with olive oil, salt, and pepper on a baking sheet.
  4. Roast for 20-25 minutes, or until tender and slightly caramelized.
  5. In a bowl, combine roasted sweet potatoes, pecans, and dried cranberries.
  6. Drizzle with maple syrup and toss to coat.
  7. Serve warm or at room temperature.
