Description

Make this simple, comforting ground beef tamale pie using cornbread mix for a quick weeknight Tex-Mex dinner.


Ingredients

  • 1 tablespoon vegetable oil
  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (10 ounce) can mild red enchilada sauce
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (8.5 ounce) package cornbread mix (like Jiffy)
  • Ingredients listed on cornbread mix package (usually milk and eggs)
  • 1 cup shredded cheddar cheese


Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Lightly grease a 9-inch pie plate or 8×8 inch baking dish.
  2. Heat the oil in a large skillet over medium heat. Add the ground beef and onion. Cook until the beef is browned and the onion is soft. Drain off any excess grease.
  3. Stir in the black beans, enchilada sauce, chili powder, cumin, salt, and pepper into the skillet with the meat mixture. Cook for 5 minutes, stirring occasionally. Spread this meat mixture evenly into the bottom of your prepared pie plate.
  4. Prepare the cornbread batter according to the package directions, using the required milk and eggs.
  5. Pour the cornbread batter evenly over the meat mixture in the pie plate.
  6. Bake for 20 to 25 minutes, or until the cornbread is golden brown and a toothpick inserted into the center comes out clean.
  7. Remove the pie from the oven. Sprinkle the shredded cheddar cheese over the top. Return to the oven for 5 minutes, or until the cheese is melted.
  8. Let the tamale pie cool for 10 minutes before slicing and serving.

Notes

  • You can add 1 small can of diced green chilies to the meat mixture for extra flavor.
  • For a spicier pie, use hot enchilada sauce instead of mild.
  • This casserole freezes well before baking; cover tightly and freeze up to three months. Thaw overnight in the refrigerator before baking.
