- 1/2 cup low sodium soy sauce
- 1/2 cup water
- 1/4 cup packed brown sugar
- 2 tablespoons mirin (or substitute with 1 tablespoon sugar and 1 tablespoon water)
- 1 tablespoon rice vinegar
- 1 teaspoon ground ginger
- 2 cloves garlic, minced
- 1 tablespoon cornstarch
- 2 tablespoons cold water
Instructions
- Combine the soy sauce, water, brown sugar, mirin, rice vinegar, ground ginger, and minced garlic in a small saucepan.
- Place the saucepan over medium heat and bring the mixture to a gentle simmer, stirring until the sugar dissolves completely.
- In a separate small bowl, whisk together the cornstarch and 2 tablespoons of cold water until smooth to create a slurry.
- Pour the cornstarch slurry into the simmering sauce while whisking constantly.
- Continue to cook, stirring frequently, until the sauce thickens and becomes glossy, about 1 to 2 minutes.
- Remove the sauce from the heat. It will thicken more as it cools.
- Use immediately as a glaze or marinade, or store it for later use.
Notes
- For a gluten-free version, substitute tamari for the soy sauce.
- If you prefer a stronger ginger or garlic flavor, use fresh grated ginger and minced fresh garlic instead of ground ginger.
- This sauce works well as a dipping sauce for dumplings or spring rolls.
