- 0.33 cup granulated sugar, divided
- 2 large eggs, separated
- 8 ounces mascarpone cheese, softened

- 1 cup heavy cream
- 1 cup ladyfingers
- Unsweetened cocoa powder, for dusting
Instructions
- In a shallow dish, combine the cooled coffee and 2 tablespoons of granulated sugar. Stir until the sugar dissolves.
- In a medium bowl, whisk together the egg yolks and the remaining 2 tablespoons of granulated sugar until pale and creamy.
- Gently whisk in the softened mascarpone cheese and vanilla extract until smooth.
- In a separate clean bowl, beat the egg whites until stiff peaks form.
- In another bowl, whip the heavy cream until soft peaks form.
- Gently fold the whipped cream into the mascarpone mixture.
- Then, carefully fold the beaten egg whites into the mascarpone and cream mixture until just combined.
- Quickly dip each ladyfinger into the coffee mixture, ensuring they are soaked but not soggy.
- Arrange a single layer of soaked ladyfingers in the bottom of an 8×8 inch baking dish.
- Spread half of the mascarpone cream mixture evenly over the ladyfingers.
- Repeat with another layer of soaked ladyfingers and the remaining mascarpone cream mixture.
- Cover the dish and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to meld and the dessert to set.
- Before serving, dust the top generously with unsweetened cocoa powder.
Notes
- For a richer flavor, you can add a tablespoon of coffee liqueur or rum to the coffee mixture.
