- 1 cup shelled edamame, cooked and cooled
- 1/2 cup tahini
- 1/4 cup fresh lemon juice
- 2 cloves garlic
- 2 tablespoons olive oil
- 1/4 teaspoon salt
- 2-4 tablespoons water (or more, for desired consistency)
- Pinch of black pepper (optional)
Instructions
- Place the cooked edamame, tahini, lemon juice, garlic, olive oil, and salt into a food processor.
- Process the mixture until it starts to break down. You may need to stop and scrape down the sides.
- With the motor running, slowly drizzle in the water, one tablespoon at a time, until you reach a smooth and creamy hummus texture.
- Taste the hummus. Add more salt or lemon juice if you prefer.
- Transfer the Edamame Hummus to a serving bowl. Drizzle with a little extra olive oil if desired.
- Serve immediately or chill until ready to enjoy.
Notes
- You can use frozen edamame; just make sure it is fully thawed and cooked before using.
- For a brighter flavor, add a teaspoon of fresh ginger during processing.
- This hummus tastes best when served with fresh vegetables or pita bread.
