Description

This Egg Roll in a Bowl recipe offers all the delicious flavors of a classic egg roll without the wrapper, making it a perfect low-carb and quick meal. It features ground pork or turkey, a colorful coleslaw mix, and a savory sauce, all stir-fried to perfection.

Ingredients

Scale
  • 1 pound ground pork or turkey
  • 1 tablespoon sesame oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 (16 ounce) bag coleslaw mix (shredded cabbage and carrots)
  • 1/4 cup soy sauce (or tamari for gluten-free)
  • 1 tablespoon rice vinegar
  • 1 teaspoon sriracha (optional, for heat)
  • Green onions, chopped, for garnish
  • Sesame seeds, for garnish

Instructions

  1. Heat sesame oil in a large skillet or wok over medium-high heat.
  2. Add ground pork or turkey and cook, breaking it up with a spoon, until browned and cooked through. Drain any excess fat.
  3. Add chopped onion to the skillet and cook until softened, about 3-5 minutes.
  4. Stir in minced garlic and grated ginger and cook for another minute until fragrant.
  5. Add the coleslaw mix to the skillet and stir well to combine with the meat and aromatics.
  6. In a small bowl, whisk together soy sauce, rice vinegar, and sriracha (if using).
  7. Pour the sauce over the mixture in the skillet and toss to coat everything evenly.
  8. Cook for 5-7 minutes, or until the cabbage is tender-crisp.
  9. Remove from heat. Garnish with chopped green onions and sesame seeds before serving.

Notes

  • Adjust sriracha to your preferred spice level.
  • For a vegetarian option, use crumbled firm tofu or tempeh instead of meat.
  • Serve as is, or over cauliflower rice for a heartier meal.
