Description

This recipe offers the classic flavors of an egg roll in a convenient, low-carb bowl. It combines ground pork or turkey with shredded cabbage in a savory stir-fry.

Ingredients

Scale
  • 1 tablespoon sesame oil
  • 1 pound ground pork or turkey
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 (16 ounce) bag coleslaw mix (shredded cabbage and carrots)
  • 1/4 cup soy sauce (or tamari for gluten-free)
  • 1 tablespoon rice vinegar
  • 1 teaspoon sriracha (optional, for heat)
  • 2 green onions, sliced (for garnish)
  • Sesame seeds (for garnish)

Instructions

  1. Heat sesame oil in a large skillet or wok over medium-high heat.
  2. Add ground pork or turkey and cook, breaking it up with a spoon, until browned and cooked through. Drain any excess fat.
  3. Stir in chopped onion, minced garlic, and grated ginger. Cook for 3-5 minutes, until the onion softens and becomes fragrant.
  4. Add the coleslaw mix to the skillet. Cook, stirring frequently, until the cabbage wilts and becomes tender-crisp, about 5-7 minutes.
  5. In a small bowl, whisk together soy sauce, rice vinegar, and sriracha (if using).
  6. Pour the sauce over the cooked meat and vegetable mixture. Toss to coat evenly.
  7. Cook for another 1-2 minutes, allowing the sauce to heat through and slightly thicken.
  8. Remove from heat. Divide the egg roll in a bowl among serving plates.
  9. Garnish with sliced green onions and sesame seeds before serving.

Notes
