Instructions
- Grill or boil the corn: Grill corn over medium-high heat, turning occasionally, until kernels are tender and lightly charred, about 10-15 minutes. Alternatively, boil corn in salted water for 5-7 minutes until tender.
- Prepare the creamy mixture: In a small bowl, combine mayonnaise and sour cream (or Mexican crema).
- Assemble the elote: Spread the mayonnaise mixture evenly over each ear of cooked corn.
- Coat with cheese and toppings: Sprinkle generously with crumbled cotija cheese, then with chopped cilantro.
- Season and serve: Squeeze fresh lime juice over each ear of corn. Sprinkle with chili powder or TajÃn and salt to taste. Serve immediately.
