Ingredients

  • 1/2 cup (1 stick) unsalted butter
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon instant espresso powder
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line the bottom of an 8-inch springform pan with parchment paper.
  2. Melt the chopped chocolate and butter together in a heatproof bowl set over a saucepan of simmering water, stirring until smooth. Remove from heat.
  3. Whisk the sugar into the melted chocolate mixture until combined.
  4. Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. In a separate bowl, whisk together the flour, cocoa powder, espresso powder, and salt.
  6. Gently fold the dry ingredients into the wet ingredients until just combined. Do not overmix.
  7. Pour the batter into the prepared springform pan. Spread evenly.
  8. Bake for 25 to 30 minutes. The edges should look set, and the center might still be slightly soft.
  9. Let the torte cool completely in the pan on a wire rack. The center will sink slightly as it cools.
  10. Once cool, carefully release the sides of the springform pan. Dust with powdered sugar before serving, if desired.
