Description

Ingredients

  • 1/4 cup mayonnaise
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon white vinegar
  • Salt to taste
  • Pepper to taste
  • Paprika for garnish
  • Fresh dill for garnish
  • Chives, finely chopped for garnish
  • Smoked paprika for garnish
  • Sriracha for a spicy kick
  • Cooked bacon, crumbled for garnish
  • Olives, sliced for garnish
  • Pickles, finely diced for garnish


Instructions

  1. Place eggs in a single layer in a saucepan. Cover with cold water by 1 inch.
  2. Bring water to a boil over high heat. Once boiling, remove from heat, cover, and let stand for 10-12 minutes.
  3. Drain hot water and immediately transfer eggs to an ice bath for 5 minutes to stop the cooking process and cool them.
  4. Gently tap and peel the cooled eggs under cool running water.
  5. Slice each egg in half lengthwise and carefully remove the yolks. Place the yolks in a small bowl.
  6. Mash the yolks with a fork until smooth.
  7. Add mayonnaise, Dijon mustard, white vinegar, salt, and pepper to the mashed yolks. Mix well until creamy and smooth.
  8. Spoon or pipe the yolk mixture back into the egg white halves.
  9. Garnish with your preferred toppings, such as paprika, fresh dill, chives, smoked paprika, a dot of sriracha, crumbled bacon, sliced olives, or diced pickles.
  10. Arrange on a platter and serve immediately, or chill until ready to serve.

Notes

  • For perfectly centered yolks, store eggs on their side in the refrigerator for a day before boiling.
  • To make piping easier, transfer the yolk mixture to a piping bag with a star tip or a resealable plastic bag with a corner snipped off.
  • Experiment with different flavor additions like a pinch of curry powder, a dash of hot sauce, or a sprinkle of garlic powder in the yolk mixture.
