A simple recipe for baking salmon fillets topped with a flavorful crust made from feta cheese and fresh herbs.

- 4 (6 ounce) salmon fillets, skin on or off
- 4 ounces feta cheese, crumbled
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh dill, chopped
- 1 teaspoon dried oregano
- 1 clove garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon lemon zest
- 1/2 teaspoon black pepper
- Pinch of salt (use sparingly due to feta)
Instructions
- Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a baking sheet with parchment paper.
- In a small bowl, combine the crumbled feta cheese, chopped parsley, chopped dill, dried oregano, minced garlic, olive oil, lemon zest, black pepper, and salt. Mix gently until the ingredients are just combined into a coarse topping.
- Place the salmon fillets on the prepared baking sheet.
- Press the feta and herb mixture evenly onto the top surface of each salmon fillet, creating a thick crust. Do not press too hard, or the feta may compact excessively.
- Bake for 12 to 15 minutes, depending on the thickness of the fillets, until the salmon flakes easily with a fork and the internal temperature reaches 145 degrees Fahrenheit (63 degrees Celsius). The feta topping should be lightly golden but not burnt.
- Remove from the oven and let rest for 2 minutes before serving.
Notes
- If you notice the feta browning too quickly, loosely tent the baking sheet with aluminum foil for the last 5 minutes of cooking.
- For a crispier crust, you can briefly broil the salmon for the last 1-2 minutes, watching carefully to prevent burning.
- Serve immediately with roasted asparagus or lemon rice.
