Description

A simple recipe for flavorful chicken seasoned with lime and fiesta spices.


Ingredients

  • 2 large chicken breasts
  • 1/4 cup lime juice
  • 2 tablespoons olive oil
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper to taste


Instructions

  1. Place chicken breasts in a shallow dish.
  2. In a small bowl, whisk together lime juice, olive oil, chili powder, cumin, paprika, garlic powder, and onion powder.
  3. Pour the marinade over the chicken, turning to coat.
  4. Cover and refrigerate for at least 30 minutes, or up to 4 hours.
  5. Preheat your grill or a skillet to medium-high heat.
  6. Remove chicken from the marinade, discarding the excess liquid.
  7. Grill or cook the chicken for 6-8 minutes per side, until cooked through (internal temperature reaches 165°F or 74°C).
  8. Let the chicken rest for 5 minutes before slicing.

  • You can substitute chicken thighs for breasts.
