- 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
- 1 tbsp olive oil
- 1 large yellow onion, thinly sliced
- 2 cloves garlic, minced
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup beef broth
- 1/4 cup dry white wine or extra beef broth
- 1 tbsp Worcestershire sauce
- 4 slices Swiss cheese
- 2 tbsp chopped fresh parsley, for garnish
Instructions
- Season the chicken pieces with salt and pepper.
- Heat olive oil in a large oven-safe skillet over medium-high heat. Add the chicken and cook until browned on all sides, about 5-7 minutes. Remove chicken from skillet and set aside.
- Add the sliced onion to the skillet. Cook, stirring occasionally, until softened and beginning to caramelize, about 10-15 minutes.
- Stir in the minced garlic and dried thyme. Cook for 1 minute until fragrant.
- Pour in the beef broth, white wine (or extra broth), and Worcestershire sauce. Bring to a simmer, scraping up any browned bits from the bottom of the skillet.
- Return the chicken to the skillet. Reduce heat to medium-low, cover, and simmer for 15-20 minutes, or until the chicken is cooked through and tender.
- Preheat your broiler.
- Top each piece of chicken with a slice of Swiss cheese.
- Place the skillet under the broiler for 1-3 minutes, or until the cheese is melted and bubbly and lightly browned. Watch carefully to prevent burning.
- Garnish with fresh parsley before serving.
