- 1/2 pound shrimp, peeled and deveined
- 1 cup vermicelli noodles

- 1 cup shredded red cabbage

- 1/2 cup thinly sliced cucumber
- For the Peanut Sauce:
- 1/2 cup peanut butter
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon honey
- 1 clove garlic, minced
- 1/4 cup warm water
Instructions
- Cook shrimp in boiling water for 2-3 minutes, or until pink and cooked through. Drain and set aside.
- Prepare vermicelli noodles according to package directions. Drain and rinse with cold water.
- In a small bowl, whisk together peanut butter, soy sauce, rice vinegar, honey, and minced garlic.
- Gradually whisk in warm water until the sauce reaches your desired consistency.
- To assemble the spring rolls, dip one rice paper wrapper in warm water for 20-30 seconds until pliable.
- Lay the wrapper flat on a clean surface.
- Arrange a few shrimp, a small portion of vermicelli noodles, shredded carrots, red cabbage, mint leaves, cilantro, and cucumber in the center of the wrapper.
- Fold the bottom edge of the wrapper over the filling, then fold in the sides.
- Tightly roll up the spring roll from the bottom.
- Repeat with the remaining wrappers and filling.
- Serve immediately with the peanut dipping sauce.
Notes
- For a vegetarian option, omit the shrimp and add firm tofu or more vegetables.
- Adjust the peanut sauce ingredients to your taste. Add a pinch of red pepper flakes for a spicier sauce.
