Description

Warmly spiced zucchini bars with a sweet frosting.


Ingredients

  • 1 cup grated zucchini
  • 1/2 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1 cup powdered sugar
  • 2 tablespoons milk


Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In a separate medium bowl, whisk together the all-purpose flour, baking soda, salt, cinnamon, nutmeg, and cloves.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Fold in the grated zucchini.
  7. Pour the batter into the prepared baking pan and spread evenly.
  8. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the bars cool completely in the pan on a wire rack.
  10. While the bars cool, prepare the frosting. In a small bowl, whisk together the powdered sugar and milk until smooth. Add more milk if needed to reach desired consistency.
  11. Once the bars are completely cool, spread the frosting evenly over the top.
  12. Cut into squares and serve.

Notes

  • Make sure the zucchini is grated finely.
  • Squeeze out any excess moisture from the grated zucchini before adding it to the batter.
  • Store leftover bars in an airtight container at room temperature for up to 3 days.
