Description
Warmly spiced zucchini bars with a sweet frosting.

- 1 cup grated zucchini
- 1/2 cup unsalted butter, softened
- 1 1/2 cups granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1 cup powdered sugar
- 2 tablespoons milk
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In a separate medium bowl, whisk together the all-purpose flour, baking soda, salt, cinnamon, nutmeg, and cloves.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Fold in the grated zucchini.
- Pour the batter into the prepared baking pan and spread evenly.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bars cool completely in the pan on a wire rack.
- While the bars cool, prepare the frosting. In a small bowl, whisk together the powdered sugar and milk until smooth. Add more milk if needed to reach desired consistency.
- Once the bars are completely cool, spread the frosting evenly over the top.
- Cut into squares and serve.
Notes
- Make sure the zucchini is grated finely.
- Squeeze out any excess moisture from the grated zucchini before adding it to the batter.
- Store leftover bars in an airtight container at room temperature for up to 3 days.
