Description

A simple, make-ahead frozen dessert featuring layers of chocolate, marshmallow fluff, and graham crackers that sets up firm in the freezer.

Ingredients

Scale
  • 1 box (14.4 ounces) graham crackers
  • 1 container (7 ounces) marshmallow fluff or creme
  • 1 tub (12 ounces) frozen whipped topping, thawed
  • 1 cup semi-sweet chocolate chips
  • 1/4 cup heavy cream
  • 1 teaspoon vanilla extract

Instructions

  1. Line an 8×8 inch baking pan with plastic wrap, leaving an overhang on the sides for easy removal.
  2. In a medium bowl, combine the marshmallow fluff and the thawed whipped topping. Mix gently until just combined.
  3. In a separate microwave-safe bowl, combine the chocolate chips and heavy cream. Microwave in 30-second intervals, stirring between each, until smooth. Stir in the vanilla extract.
  4. Spread a thin layer of the chocolate mixture onto the bottom of the prepared pan.
  5. Arrange a single layer of graham crackers over the chocolate. Break crackers as needed to fit the pan.
  6. Spread half of the marshmallow mixture evenly over the graham crackers.
  7. Add another layer of graham crackers.
  8. Spread the remaining marshmallow mixture over the second layer of crackers.
  9. Top with the remaining chocolate mixture, spreading it evenly.
  10. Cover the pan tightly with the plastic wrap overhang.
  11. Freeze for at least 6 hours, or until completely firm.
  12. To serve, lift the dessert out of the pan using the plastic wrap overhang. Let it sit at room temperature for 5 to 10 minutes before slicing into squares.

Notes

  • For a slightly softer texture, remove the cake from the freezer 15 minutes before slicing.
  • You can toast the top layer of marshmallow fluff with a kitchen torch before freezing if you prefer a traditional s’mores look, but this step is optional.
  • Use dark chocolate chips for a richer flavor contrast.
