Description
Make this easy, refreshing frozen yogurt bark using fresh spring berries. It is a simple, no-bake dessert perfect for warm weather.

- 2 cups plain Greek yogurt
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1 cup mixed spring berries (strawberries, blueberries, raspberries), sliced or halved
- 1 tablespoon lemon zest (optional)
Instructions
- Line a small baking sheet (about 9×5 inches) with parchment paper, letting the paper overhang slightly for easy removal.
- In a medium bowl, combine the Greek yogurt, honey or maple syrup, and vanilla extract. Mix until smooth.
- If using, stir in the lemon zest.
- Spread the yogurt mixture evenly onto the prepared baking sheet, aiming for about 1/2 inch thickness.
- Arrange the mixed spring berries evenly over the top of the yogurt layer. Gently press the berries slightly into the yogurt.
- Place the baking sheet in the freezer for at least 4 to 6 hours, or until completely solid.
- Once frozen, lift the bark out of the pan using the parchment paper overhang.
- Break or cut the bark into irregular pieces or squares.
- Store the pieces in an airtight container or freezer bag in the freezer for up to two weeks.
Notes
- For a lower sugar option, use plain, unsweetened yogurt and increase the amount of naturally sweet berries.
- If you prefer a firmer bark, use full-fat Greek yogurt.
- If the bark is difficult to break, let it sit at room temperature for 5 minutes before cutting.
