  • 1.5 lbs sirloin steak, cut into 1-inch cubes
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced

  • 1 tablespoon olive oil
  • Optional: 2 tablespoons fresh parsley, chopped, for garnish


Instructions

  1. Pat the steak cubes dry completely with paper towels. Season generously with salt and pepper.
  2. Heat the olive oil in a large skillet over medium-high heat until it shimmers.
  3. Add half of the seasoned steak cubes to the hot skillet in a single layer. Do not overcrowd the pan.
  4. Sear the steak for 2-3 minutes per side until nicely browned. Remove the first batch and set aside.
  5. Repeat the searing process with the remaining steak cubes. Remove and set aside with the first batch.
  6. Reduce the heat to medium. Add the butter to the skillet. Let it melt until it foams slightly.
  7. Add the minced garlic to the melted butter. Cook for about 60 seconds until fragrant; do not let the garlic burn.
  8. Return all the seared steak bites to the skillet. Toss quickly to coat the steak evenly in the garlic butter sauce.
  9. Cook for one minute more, stirring constantly.
  10. Remove from heat. Garnish with fresh parsley, if using, and serve immediately.

  • Use a heavy-bottomed skillet, like cast iron, for the best sear on your steak.
