- 1.5 lbs sirloin steak, cut into 1-inch cubes
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 1 tablespoon olive oil
- Optional: 2 tablespoons fresh parsley, chopped, for garnish
Instructions
- Pat the steak cubes dry completely with paper towels. Season generously with salt and pepper.
- Heat the olive oil in a large skillet over medium-high heat until it shimmers.
- Add half of the seasoned steak cubes to the hot skillet in a single layer. Do not overcrowd the pan.
- Sear the steak for 2-3 minutes per side until nicely browned. Remove the first batch and set aside.
- Repeat the searing process with the remaining steak cubes. Remove and set aside with the first batch.
- Reduce the heat to medium. Add the butter to the skillet. Let it melt until it foams slightly.
- Add the minced garlic to the melted butter. Cook for about 60 seconds until fragrant; do not let the garlic burn.
- Return all the seared steak bites to the skillet. Toss quickly to coat the steak evenly in the garlic butter sauce.
- Cook for one minute more, stirring constantly.
- Remove from heat. Garnish with fresh parsley, if using, and serve immediately.

- Use a heavy-bottomed skillet, like cast iron, for the best sear on your steak.
- For tender steak, avoid overcooking the cubes once they return to the pan with the sauce.
- You can substitute Worcestershire sauce for a richer flavor in the butter sauce if you like.
