  • 1.5 lbs baby potatoes, halved or quartered if large
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • Salt, to taste
  • Black pepper, to taste
  • Fresh parsley, chopped, for garnish (optional)


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the potatoes with olive oil, rosemary, thyme, salt, and pepper until evenly coated.
  3. Spread the seasoned potatoes in a single layer on a large baking sheet.
  4. Roast the potatoes for 20-25 minutes, or until tender and lightly browned.
  5. While the potatoes are roasting, pat the steak bites dry with paper towels and season them with salt and pepper.
  6. In a large skillet, melt the butter over medium-high heat.
  7. Add the minced garlic to the melted butter and cook for about 1 minute until fragrant, being careful not to burn it.
  8. Add the seasoned steak bites to the skillet in a single layer. Sear the steak bites for 1-2 minutes per side, until browned. Do not overcrowd the pan; cook in batches if necessary.
  9. Once the potatoes are roasted, add them to the skillet with the seared steak bites.
  10. Toss everything together in the skillet to coat the steak and potatoes with the garlic butter. Cook for another 2-3 minutes until the steak is cooked to your desired doneness and the potatoes are heated through.
  11. Garnish with fresh parsley if desired. Serve immediately.
