- 2 cloves garlic, minced

- 1/2 teaspoon fresh rosemary, finely chopped
- 1 tablespoon all-purpose flour
- 8 ounces Gruyère cheese, shredded
- 8 ounces sharp white cheddar cheese, shredded
- 1 teaspoon lemon juice
- 1 tablespoon fresh chives, chopped (for garnish)
- Pinch of black pepper
Instructions
- In a medium saucepan over medium heat, combine the beer, minced garlic, thyme, and rosemary. Heat until the mixture just begins to simmer, then remove from heat.
- In a separate bowl, toss the shredded Gruyère and cheddar cheeses with the flour until evenly coated. This prevents clumping.
- Gradually add the flour-coated cheese mixture to the warm beer mixture, a handful at a time, stirring constantly with a wooden spoon or whisk until each addition is fully melted and smooth before adding more. Keep the heat low to prevent the cheese from separating.
- Once all the cheese is melted and the fondue is smooth, stir in the lemon juice and black pepper.
- Transfer the fondue to a fondue pot set over low heat to keep warm. Garnish with fresh chives before serving.
- Serve immediately with your choice of dipping items.
