- 1/4 teaspoon Black Pepper

Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl, toss the cut potatoes with olive oil until fully coated.
- Add the minced garlic, rosemary, thyme, salt, and pepper to the bowl. Mix well so the herbs and seasoning stick to every potato piece.
- Spread the seasoned potatoes in a single layer on a large baking sheet. Do not overcrowd the pan; this helps them crisp up.
- Roast for 30 to 40 minutes, flipping them halfway through the cooking time.
- The potatoes are done when they are golden brown and crispy on the outside and tender inside.
- Remove from the oven and sprinkle with fresh parsley before serving hot.
Notes
- For extra crispiness, soak the cut potatoes in cold water for 30 minutes, then drain and pat them completely dry before seasoning.
- Use your favorite herb blend; oregano or sage work wonderfully here too.
- To achieve a perfect single layer, you may need to use two baking sheets.
